Happy Birthday Zander!
Happy Birthday to my little Love Monkey! May 3 years old be even more fun than 2 years old!
And for those who are curious, here are a couple of pictures of his birthday cake. It came together easier than I thought, but let me say that it does take a lot of paste to tint frosting black- and I think it gave it a slight off flavor...but the end result is quite fun, and Zander loves it. The cake itself is a raspberry cake with vanilla buttercream. I will share the cake later on if it turns out okay. It was kind of an experiment, and I'm not 100% confident of it's flavor, so I will hold off judgement until the actual eating of the cake.

Happy birthday Zander!!
Would you believe my girls went and picked out my birthday cake in November and they got me a CARS cake!! Too cute and it truly made me feel like a kid again.....which was much better than actually feeling my real age!

Happy Birthday to Zander! That cake is TOO CUTE! I've never really tackled cakes, so I am quite impressed. Maybe when I have kids I'll try my hand at it.

The cake looks great Erika! One suggestion about the black frosting if you want to make it again - it is best done 1-3 days before hand so you don't have to use a lot of the paste. It will darken the longer it sits, so you don't have to worry about a bitter taste that it can sometimes get with an excessive amount of coloring! Starting with a chocolate buttercream is also a bit easier.
You did a great job on the cake. Zander is such a cutie. Wishing him the best third year ever!

The cake tasted pretty good, so the recipe will be forthcoming, and Joe, thanks so much for that tip about the black. I did notice that it got darker as it sat (which really just annoyed me)- and I never would have thought to start with chocolate buttercream. Who's birthday is next...?
